Paleo Chicken Fajita
A delicious, high-protein, and low-carb meal packed with vibrant bell peppers and savory spices.
Ingredients
- 500g Chicken breast (sliced into strips)
- 3 Bell peppers (mixed colors, sliced)
- 1 Medium onion (sliced)
- 2 tbsp Olive oil
- 1 tbsp Fajita seasoning (Cumin, Paprika, Garlic powder, Chili)
- Fresh cilantro & lime wedges for serving
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken strips and cook until browned and cooked through, then remove from skillet.
- In the same skillet, add sliced onions and bell peppers. Sauté until tender-crisp.
- Return chicken to the skillet, sprinkle fajita seasoning, and toss everything together for 2 minutes.
- Garnish with fresh cilantro and a squeeze of lime juice before serving.
Green Goddess Smoothie
A refreshing and nutrient-dense green smoothie packed with antioxidants to energize your day.
Ingredients
- 1 cup Fresh spinach leaves
- 1/2 Cucumber (sliced)
- 1 Green apple (cored and chopped)
- 1/2 cup Coconut water or almond milk
- 1 tbsp Chia seeds or flaxseeds
- Ice cubes (optional)
Instructions
- Wash the spinach, cucumber, and green apple thoroughly.
- Add all the liquid base (coconut water) into the blender first.
- Add the spinach, cucumber, apple chunks, and seeds into the blender.
- Blend on high speed for 1-2 minutes until completely smooth and creamy.
- Pour into a glass and enjoy fresh!
