Paleo Chicken Fajita

A delicious, high-protein, and low-carb meal packed with vibrant bell peppers and savory spices.

Ingredients

  • 500g Chicken breast (sliced into strips)
  • 3 Bell peppers (mixed colors, sliced)
  • 1 Medium onion (sliced)
  • 2 tbsp Olive oil
  • 1 tbsp Fajita seasoning (Cumin, Paprika, Garlic powder, Chili)
  • Fresh cilantro & lime wedges for serving

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken strips and cook until browned and cooked through, then remove from skillet.
  3. In the same skillet, add sliced onions and bell peppers. Sauté until tender-crisp.
  4. Return chicken to the skillet, sprinkle fajita seasoning, and toss everything together for 2 minutes.
  5. Garnish with fresh cilantro and a squeeze of lime juice before serving.

Ingredients

  • 1 cup Fresh spinach leaves
  • 1/2 Cucumber (sliced)
  • 1 Green apple (cored and chopped)
  • 1/2 cup Coconut water or almond milk
  • 1 tbsp Chia seeds or flaxseeds
  • Ice cubes (optional)

Instructions

  1. Wash the spinach, cucumber, and green apple thoroughly.
  2. Add all the liquid base (coconut water) into the blender first.
  3. Add the spinach, cucumber, apple chunks, and seeds into the blender.
  4. Blend on high speed for 1-2 minutes until completely smooth and creamy.
  5. Pour into a glass and enjoy fresh!
